The first leg takes the Fieris from their home in northern California to Lake Tahoe, Calif. where decadent Belgian waffles fuel a day of mountain biking. Then they get a bird's eye view of American ingenuity at the Hoover Dam before grabbing traditional Mexican mole and homemade salsa at Guy's restaurant in Laughlin, Nev. Later in Flagstaff, Ariz. the Fieris get to taste the red and green chiles at the local Chile Festival. They finish it all off with a cold glass of mead brewed with local wildflower honey.

The fishing's good, so they take their catch to a nearby ranch where Guy and his friends fry up the fish, along with some chicken parmesan, for the evening feast. In New Orleans, Guy searches for the perfect po' boy in the back of an off-the-beaten path grocery store before visiting Johnny Sanchez, where Chef Aaron Sanchez shows Guy how to make ceviche and a soft-shell crab sandwich. Finally, a canoe tour of the bayou ends with a festive crawfish boil in fine Cajun form.
