He has chosen to battle Michiba because he does not like the way the Iron Chef uses non-traditional ingredients in Japanese dishes. The theme ingredient cost approximately $10,000. Iron Chef will cook for 50 minutes, then cook for his final 10 minutes after challenger tasting is completed.
